4 boneless, skinless chicken breasts
4 cups of water
1 package of taco seasoning
3 cups of instant rice
3 cups of shredded cheddar (mild or sharp) or Mexican mix cheese
Salsa to taste (optional)

Place chicken breasts and water and taco seasoning in crock pot on high and cook all day.
Shred chicken
Cook rice in the remaining taco seasoned liquid (I did this on the stove not in the crock pot.)
Mix chicken, cooked rice, cheese and salsa
Put in baking dish and bake at 350 degrees for 20-30 minutes until heated through

This was really good and filling and we will be making it again. It fed all 5 of us.
