The other day I had made a comment about mint julep/mint tea and how great it is in the summer. Last night SO surprised me with a mint plant, so cute. :-)
We had just received a gift of a box of Palisade peaches from his grandparents, too.
We searched for recipes and finally came up with this fusion of a few recipes for peach mint tea.
Here is our recipe for tea made inside the house (taken from an old post), but you can also do sun tea or sweet tea with this recipe. It only needs a pre-sweetened tea.
Tea
Boil 4 cups water. Place 4 tea bags in a st.st bowl and add the tea bags. Let steep for 4 minutes. Remove tea bags. Add 1/4 cup sugar and let dissolve/mix. Allow to cool. Pour over 4 cups crushed ice in a pitcher. It turns out darn near perfect. Serve by pouring over ice in cups. Notice all of the 4's? Easy to remember, haha.
That is not an overly sweet tea, so if you use it, feel free to add more sugar if that is what you prefer.
We peeled and sliced 4 VERY ripe peaches. (Roughly into 8ths.) We covered the peaches with 1 Tbsp. of sugar and 1 Tbsp. of lemon juice and mixed that up well. It sat for 30 minutes "cooking" until it was added to the tea. Then we added 8 small mint leaves to the tea. The tea refrigerated overnight - and now it is very yummy! Mmmmm.
