This can be made ahead, stored, and heated when you are ready to start fixing dinner.
Easy Weekday Sweet Potato Casserole
1 small can yams, drained
1/8 cup brown sugar
1/2 cup milk
2 tbsp. butter, plus 1 tbsp for topping
1/4 cup bread crumbs
Mix yams, brown sugar, milk and 2 tbsp. butter (unmelted) with a beater until smooth. Place mixture in a small pyrex rectangle dish. (I use a 5 x 8 inch size.) Melt 1 tbsp butter in microwave and add bread crumbs. Mix and spread evenly over yams. At this point you can cover and store the yams in the fridge or just heat for 25 minutes at 350 degrees.
