Ingredients:
3 tablespoons lime juice
2 tablespoons olive oil
1 teaspoon ground cumin
2 16 oz. cans of navy beans, drained
2 cloves of chopped garlic
1 chopped jalapeno pepper
3/4 cup chopped red bell pepper
3/4 cup minced cilantro
1/4 cup minced green onion
pita chips

Directions:
In a blender, combine lime juice, olive oil, cumin, beans, garlic and jalapeno pepper. When well blended, mix in red bell peppers, cilantro and green onions. Chill at least 4 hours. Serve with pita chips. You can make pita chips by cutting pita rounds into triangles and arranging on a baking sheet. Spray the chips with cooking spray and bake 15-25 minutes or until crisp.
